Raw Mein

  • 4-5 zucchinis
  • 3 leaves of bok choy
  • 1 large carrot
  • 1 red pepper

For this recipe you can use a julienne cutter, but if you don’t have one, no worries! With a knife, you can just cut the zucchini into thin slices, stack them up, and then cut them lengthwise into thin strips. I used a julienne cutter and got perfect lo mein formed noodles. Peel the carrot with a peeler or knife and make thin slices. Dice the red pepper up. Chop up the bok choy. Put all ingredients in a bowl. Then add the ginger miso dressing and toss lightly. Season with salt and pepper. Put a sprig of parsley and dinner is served! This recipe makes 4 small servings. What you don’t eat you can store in the fridge and its tastes even better the next day!

Raw Ginger Miso Dressing

  • 4 tablespoons of white miso
  • 1 inch long piece of ginger
  • 2 tablespoons of sesame oil
  • 1/3 cup of apple cider vinegar
  • 2 tablespoons of extra virgin olive oil
  • 4 tablespoons of water
  • 2 carrots (chopped)

Put everything into a food processor and pulse to mince the carrots. Run the processor for a minute, until the mixture is chunky smooth. You can use also use a blender and blend all ingredients until it is smooth. Store in the fridge until ready to use.
